# 小炒黄牛肉
## 配料
- 调理牛肉片(牛霖、盐、鸡精、蚝油、老抽等)(老乡鸡中央厨房分切、调理,详细成分与配比官方未公布,请依据个人口味适量调整)
- 小炒黄牛肉汁(来自湖南鹏城远方食品、成都圣恩生物)
- 大豆油
- 牛油
- 蒜子
- 泡小米辣
- 玉耳
- 鲜红小米辣
- 青蒜或香芹
## 步骤
- 1. 锅中下入 180g 大豆油和 60g 牛油烧至 180℃倒入 150g 蒜子、100g 泡小米辣、100g 鲜红小米辣爆香;
- 2. 下入 700g 调理牛肉片大火快速炒散至变色;
- 3. 倒入 180g 小炒黄牛肉汁、400g 泡发好的玉耳和 300g 青蒜或香芹翻炒 1 分钟出品。
