# 虾仁蒸鸡蛋
## 原料:
- 鸡蛋
- 鸡油
- 清酱汁
-
- 蚕豆酱
- 虾仁
- 蒸鱼豉油
- 芝麻香油
- 葱花
## 步骤:
- 1.调制蛋液:将鸡蛋打成蛋液,然后将 600g 鸡蛋液、30g 鸡油、10g 清酱汁、17g 盐、1700g 水、30g 蚕豆酱混合并用打蛋器搅拌均匀,直至蛋清、蛋黄完全打散;
- 2. 蛋液过滤:用过滤网滤出蚕豆酱残渣;
- 3. 蛋液蒸制:蒸柜上汽后,蒸 5 分钟,焖 1 分钟;
- 4. 虾仁蒸制:蒸柜上汽后,蒸 15 分钟;
- 5. 最后在蒸制好的鸡蛋上面,加入 1 颗蒸熟的虾仁淋上3g蒸鱼豉油、2g芝麻香油。
