# 肉饼蒸蛋
## 原料:
- 调理肉丝(后座肉、盐、老抽、大豆油等)(老乡鸡官方未给出配比,请依据个人口味适量调整)
- 淀粉

## 步骤:
- 1.肉饼蒸蛋汁调配9 份180g 老鸡汤、20g 生抽,搅拌均匀;
- 2. 肉馅调配9 份):取 1000g 调理肉丝剁碎,加入 10g 鸡精和 100g 水,搅拌上劲后再加 100g 水,再次搅拌上劲,加入 20g 淀粉,搅拌均匀;
- 3. 肉饼蒸蛋操作1份在餐具中放130g肉馅用汤勺将肉馅中心部按压出凹陷小窝并打入一颗鸡蛋
- 4. 蒸柜上汽后,蒸制 15 分钟,出品时撒 1g 葱花和 1g 红椒
粒点缀。
