# 外婆菜炒鸡蛋
## 配料
- 外婆菜(湖南巧佳宴、湖南湘典)
- 鸡蛋
- 青豌豆
- 大豆油
- 鲜红小米辣
- 生抽
- 鸡精
## 步骤
- 1. 锅中倒入 250g 大豆油烧热,将 800g 鸡蛋液炒成鸡蛋片状,盛装出锅备用;
- 2. 下入20g 大豆油、20g 鲜红小米辣、200g 青豌豆,炒出香
味;
- 3. 下入1000g 外婆菜、加25g 鸡精、40g 生抽大火爆炒2
分钟;
- 4. 加入鸡蛋片,翻炒均匀出品。
